Method
Preparing the Pancakes

Mix Dry Ingredients
In a large bowl, whisk together flour, baking powder, baking soda, and salt.

Mix Wet Ingredients
In another bowl, combine buttermilk, eggs, melted butter, vanilla extract, lemon zest, and lemon juice. Whisk until smooth.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
Making the Guava Puree

Blend Ingredients
In a blender, combine chopped guava, sugar, and water. Blend until smooth. You can strain it to remove seeds if desired.
Making the Ube Coconut Sauce

Combine Ingredients
In a saucepan, combine mashed ube, coconut milk, sugar, and vanilla extract. Cook over medium heat, stirring frequently, until the mixture is well combined and heated through.
Serving

Plate the Pancakes
Stack pancakes on a plate, drizzle with guava puree and ube coconut sauce, and serve warm.
