Prepare the Béarnaise Butter

Make the Béarnaise Sauce
In a small saucepan, melt 1 cup of unsalted butter over low heat. In another pan, combine shallots, white wine vinegar, and tarragon and simmer until reduced. Whisk in egg yolks until thickened. Slowly whisk in melted butter. Season with salt and pepper.
Prepare the Maître d' Butter

Make the Maître d' Butter
In a bowl, combine 1 cup of unsalted butter, parsley, chives, lemon juice, salt, and pepper. Mix well and refrigerate until firm.
Prepare the Frites

Make the Frites
Peel and cut the Russet potatoes into thin strips. Rinse in cold water and soak for 30 minutes. Drain and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown. Remove and drain on paper towels. Season with salt to taste.

Grill the Steak
Season the Hawaiian grass-fed beef steaks with salt and pepper. Grill over medium-high heat for 4-6 minutes per side for medium-rare, or until desired doneness. Let rest for a few minutes before serving.
