    Marinate the Eggplant

    Slice the eggplant into rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture. Rinse and pat dry. Marinate in olive oil, balsamic vinegar, and minced garlic for at least 1 hour.

    Prepare the Vierge Sauce

    Halve the cherry tomatoes and mix with chopped fresh basil, olive oil, salt, and pepper in a bowl. Set aside to let the flavors meld.

    Prepare the Zucchini

    Slice the zucchini into rounds, toss with olive oil, salt, and pepper, and grill or char in a skillet until tender and slightly charred.

Cooking

    Bread the Veal

    Set up a breading station with flour, beaten eggs, and breadcrumbs. Dredge each veal cutlet in flour, dip in eggs, and coat with breadcrumbs.

    Cook the Veal

    Heat olive oil in a skillet over medium-high heat. Fry the breaded veal cutlets for about 3-4 minutes on each side until golden brown and cooked through. Drain on paper towels.

Assembly

    On a plate, arrange the charred zucchini and marinated eggplant. Place a veal cutlet on top and spoon the cherry tomato vierge over the top. Garnish with additional fresh basil if desired.
