Cheesecake Base

Lychee Vanilla Curacao Syrup

Method

Cheesecake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 190°C (375°F).

  2. 2

    Mix the Cheesecake Ingredients

In a large mixing bowl, blend the Sweetland Farm chèvre, cream cheese, and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, flour, and salt until fully combined.

  3. 3

    Bake the Cheesecake

Pour the mixture into a greased springform pan. Bake in the preheated oven for about 40-45 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional 30 minutes.

  4. 4

    Cool and Chill

Remove the cheesecake from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.

Lychee Vanilla Curacao Syrup Preparation

  1. 5

    Prepare the Syrup

In a saucepan, combine lychee fruit, sugar, water, and vanilla. Bring to a boil, then reduce heat and simmer for 10 minutes. Stir in Curacao liqueur, and let cool.

Assembly

  1. 6

    Serve the Cheesecake

Once the cheesecake is chilled, slice it and plate it. Drizzle with lychee vanilla curacao syrup and top with mixed seasonal fruits.
