Method

Potato Purée

    Prepare the Potatoes

    Peel and cut the Yukon Gold potatoes into chunks. Place in a pot of cold salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Make the Purée

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy. Keep warm.

Ali'i Mushrooms

    Sauté the Mushrooms

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add ali'i mushrooms and cook until tender, about 5-7 minutes. Season with fresh thyme, salt, and black pepper.

Bordelaise Sauce

    Prepare the Sauce

    In a saucepan, combine red wine and minced shallots. Simmer until reduced by half. Add beef stock and thyme, and continue to simmer until thickened. Stir in butter and season with salt and black pepper.

A5 Miyazaki Wagyu

    Cook the Wagyu

    Season the A5 Miyazaki Wagyu steak with salt and black pepper. Heat a skillet over high heat and sear the steak for 2-3 minutes on each side for medium-rare. Let rest for a few minutes before slicing.
