Prepare the Ingredients
Begin by preparing all your ingredients. If using dried beans, soak them overnight and cook until tender. If using canned beans, rinse and drain them.

Cook the Bacon
In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat in the pot.

Sauté Vegetables
In the same pot, add the chopped onion, diced carrot, and minced garlic. Sauté until the onion is translucent.

Add Tomato Paste and Beans
Stir in the tomato paste and cook for a minute. Then add the beans and mix well.

Add Stock and Seasoning
Pour in the chicken stock, add thyme, bay leaves, salt, and black pepper. Stir to combine.

Incorporate Sausage and Duck Confit
Add the pork sausage and duck confit to the pot. Bring to a simmer, then reduce the heat to low.

Simmer the Cassoulet
Cover and let the cassoulet simmer for about 1.5 hours, stirring occasionally. If it becomes too thick, add more stock or water.

Crisp the Bacon
While the cassoulet is simmering, chop the reserved bacon and fry it until crispy. Set aside.
