Method
Preparation
Prepare the Foie Gras
Remove the foie gras from the refrigerator and let it sit at room temperature for about 30 minutes. This will make it easier to slice.
Season the Foie Gras
In a bowl, gently combine the foie gras with salt, black pepper, port wine, and thyme leaves, being careful not to break it apart. Let it marinate for about 15 minutes.
Form the Pâté
Line a terrine mold with plastic wrap, leaving enough overhang to cover the top later. Carefully place half of the foie gras mixture into the mold, pressing it down gently. If using pistachios, sprinkle them evenly over the foie gras. Add the remaining foie gras mixture on top, pressing down to pack it tightly.
Add Bay Leaves and Cover
Place the fresh bay leaves on top of the foie gras, then fold the plastic wrap over the top to cover it securely.
Cooking
Cook the Foie Gras
Preheat the oven to 150°C (300°F). Place the terrine mold in a larger baking dish filled with hot water (bain-marie) and bake for about 30-40 minutes, or until the foie gras is just set.
Cool and Chill
Remove the terrine from the oven and let it cool at room temperature for about 15 minutes. Then refrigerate for at least 4 hours or overnight to allow it to firm up.
Serve
Once chilled, remove the terrine from the mold by lifting the plastic wrap. Slice the foie gras with a warm knife and serve with toasted bread or crackers, garnished with additional thyme or microgreens if desired.
