1. Prepare the Shrimp
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and shallots, and sauté until fragrant, about 2 minutes. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove the shrimp and set aside.
2. Make the Spinach Mixture
In the same skillet, add the remaining 2 tablespoons of butter and the chopped spinach. Sauté until wilted, about 3-4 minutes. Stir in the heavy cream, Parmesan cheese, lemon juice, salt, and black pepper. Cook until the mixture thickens slightly, about 5 minutes.
3. Combine and Flambé
Return the shrimp to the skillet and mix well with the spinach mixture. Pour in the Pernod and carefully flambé (ignite) to burn off the alcohol. Allow the flame to burn out on its own.
4. Serve
Transfer the shrimp Rockefeller to a baking dish, sprinkle with bread crumbs and chopped parsley, and serve warm.
