Prepare the Shallots
Finely chop the shallots and set aside.

Add the Wine
Pour in the white wine and bring to a simmer. Allow it to reduce by half, which should take about 5-7 minutes.

Add Broth and Cook
Add the beef broth and continue to simmer for another 5 minutes.

Stir in Dijon Mustard and Cream
Reduce the heat to low and stir in the Dijon mustard and heavy cream. Mix well and allow to simmer for an additional 5 minutes, stirring occasionally.

Season the Sauce
Season with salt and black pepper to taste. If the sauce is too thick, you can add a bit more cream or broth to reach your desired consistency.

Serve
Remove from heat and serve warm over cooked entrecôte or your favorite cut of beef.
