Sauté Shrimp
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.

Make the Sauce
In the same skillet, add the chopped spinach and cook until wilted. Pour in the heavy cream and stir in the Parmesan cheese, salt, black pepper, and lemon juice. Cook until the sauce thickens slightly, about 5 minutes.

Combine Shrimp and Sauce
Return the sautéed shrimp to the skillet with the sauce. Add the Pernod and stir to combine. Allow it to simmer for another 2 minutes.
Topping and Broiling

Prepare Topping
In a small bowl, mix together the bread crumbs, grated Parmesan cheese, and melted butter.

Assemble and Broil
Transfer the shrimp and sauce mixture to a baking dish. Evenly sprinkle the breadcrumb mixture over the top. Place under the broiler for about 2-4 minutes, or until the topping is golden brown and crispy.

Carefully ignite the Pernod in the dish using a long lighter or match. Allow the flames to subside as the alcohol burns off. Serve immediately.
