    Prepare the Chicken

    In a large bowl, marinate chicken pieces in red wine for at least 2 hours or overnight in the refrigerator.

    Cook the Bacon

    In a large Dutch oven or heavy pot, cook the diced bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.

    Brown the Chicken

    Remove chicken from marinade (reserve marinade) and pat dry. In the same pot with bacon drippings, add olive oil if needed. Brown the chicken pieces on all sides, then remove and set aside.

    Sauté Vegetables

    In the same pot, add onions, garlic, carrots, and mushrooms. Sauté until softened, about 5-7 minutes.

    Combine Ingredients

    Return the chicken and bacon to the pot. Add the reserved wine marinade, chicken broth, thyme, and bay leaves. Season with salt and pepper.

    Simmer

    Bring to a boil, then reduce heat to low. Cover and let simmer for 1.5 to 2 hours, or until chicken is tender.
