    Sear the Lamb Shanks

    In a large Dutch oven, heat the olive oil over medium-high heat. Season the lamb shanks with salt and black pepper. Add the lamb shanks to the pot and sear on all sides until browned, about 4-5 minutes per side. Remove the shanks and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for another minute.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer and let cook for about 5 minutes.

    Add Broth and Herbs

    Add the beef broth, rosemary, and thyme to the pot. Return the seared lamb shanks to the pot, ensuring they are submerged in the liquid.

    Braise the Lamb

    Cover the pot with a lid and transfer to a preheated oven at 325°F (160°C). Braise for about 2.5 to 3 hours, or until the lamb is fork-tender.
