For the Seared Salmon

    Prepare the Salmon

    Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Sear the Salmon

    Place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes, until the skin is crispy and the salmon is cooked halfway up the sides. Flip and cook for another 3-4 minutes until done.

    Remove from Heat

    Transfer the salmon to a plate and cover loosely with foil to keep warm.

For the Asparagus

    Prepare the Asparagus

    Wash the asparagus and trim the tough ends.

    Blanch the Asparagus

    Bring a pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking.

    Sauté the Asparagus

    In the same skillet used for the salmon, melt the butter over medium heat. Add the blanched asparagus, toss with lemon juice and salt, and sauté for 2-3 minutes until heated through.

For the Hollandaise Sauce

    Prepare the Double Boiler

    In a saucepan, bring a few inches of water to a simmer. Place a heatproof bowl over the saucepan, ensuring it doesn’t touch the water.

    Whisk the Egg Yolks

    Add egg yolks and lemon juice to the bowl. Whisk until the mixture is thickened and pale, about 3-5 minutes.

    Add the Butter

    Gradually add the melted butter while whisking continuously until the sauce is thick and creamy. Adjust seasoning with salt and cayenne pepper to taste.

    Serve Immediately

    Keep the hollandaise sauce warm until ready to serve with salmon and asparagus.
