Crispy Fried Calamari

Method

Crispy Fried Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels. This step is crucial to prevent excess moisture, which will affect the crispiness.

  2. 2

    Make the Coating

In a large mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well until evenly combined.

  3. 3

    Soak in Buttermilk

Place the calamari rings into another bowl and pour the buttermilk over them. Let them soak for about 15-20 minutes. This tenderizes the calamari and helps the coating stick.

  4. 4

    Heat the Oil

In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.

  5. 5

    Coat the Calamari

Once the calamari has soaked, remove them from the buttermilk and let the excess drip off. Dredge them in the flour mixture, ensuring they are well coated on all sides.

  6. 6

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

  7. 7

    Serve

Serve the crispy fried calamari immediately with the spicy aioli on the side.

Spicy Aioli

  1. 8

    Mix the Ingredients

In a small bowl, combine mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt. Stir well until all ingredients are fully incorporated.

  2. 9

    Adjust Seasoning

Taste the aioli and adjust the seasoning with more salt or sriracha to achieve your desired level of spiciness.
