Calamari Preparation

Prepare the Calamari
If the calamari is not pre-cleaned, clean it by removing the skin and innards. Cut the body into rings and set aside.

Set Up Breading Station
In a shallow bowl, combine flour, cornstarch, salt, black pepper, and garlic powder. In a separate bowl, beat the eggs. In a third bowl, place the breadcrumbs.

Breading the Calamari
Dip each calamari ring first into the flour mixture, then into the egg, and finally coat with breadcrumbs. Make sure each piece is well coated.

Frying
In a deep frying pan, heat oil over medium-high heat. Once hot, fry the breaded calamari in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain.

Sauté Garlic
Add minced garlic to the hot oil and sauté for about 1 minute until fragrant.

Simmer Sauce
Bring the sauce to a simmer and let it cook for 15-20 minutes, stirring occasionally, until thickened.
