Squid Preparation

    Clean the Squid

    Rinse the fresh squid under cold water and remove the head and innards. Cut the squid bodies into rings, about 1cm thick, and leave the tentacles whole.

    Prepare the Coating

    In a mixing bowl, combine cornflour, salt, and black pepper. Mix well to create an even coating mixture.

    Coat the Squid

    Take the squid rings and tentacles and dredge them in the cornflour mixture, ensuring they are evenly coated. Shake off any excess flour.

    Heat the Oil

    In a deep pan or fryer, heat the vegetable oil to 180°C (350°F). Use a thermometer for accuracy.

    Fry the Squid

    Once the oil is hot, carefully add the squid in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Chili Garlic Sauce

    Prepare the Sauce Ingredients

    Finely chop the fresh red chili and garlic cloves. Squeeze the juice from the lime and set aside.

    Mix the Sauce

    In a small bowl, combine the chopped chili, garlic, lime juice, soy sauce, and honey. Mix well until the honey is fully dissolved.

    Serve

    Serve the crispy squid hot, drizzled with the chili garlic sauce or served on the side for dipping. Enjoy!
