For the Grilled Barramundi

    Marinate the Fish

    In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Whisk together until well mixed. Add the barramundi fillets to the bowl, ensuring they are well coated in the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes.

    Grill the Barramundi

    Preheat the grill to medium-high heat. Remove the barramundi from the marinade and place it on the grill. Grill for about 4-5 minutes on each side or until the fish flakes easily with a fork. Remove from grill and set aside.

For the Potato Rosti

    Prepare the Mixture

    In a large bowl, combine the grated potatoes, finely chopped onion, egg, salt, and black pepper. Mix well until all ingredients are evenly combined.

    Cook the Rosti

    In a large skillet, melt 2 tablespoons of butter over medium heat. Once melted, add half of the potato mixture and press it down into an even layer. Cook for about 5-7 minutes until the bottom is golden brown. Flip the rosti carefully and add another tablespoon of butter. Cook for an additional 5-7 minutes until the other side is golden brown. Repeat with the remaining potato mixture.

For the Asparagus

    Prepare the Asparagus

    Rinse the asparagus spears under cold water and trim the woody ends. In a bowl, toss the asparagus with olive oil, salt, and black pepper until well coated.

    Grill the Asparagus

    Place the asparagus on the grill alongside the barramundi. Grill for about 5-7 minutes, turning occasionally until they are tender and slightly charred.
