Chocolate Mousse Preparation

    Melt the Chocolate

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

    Mix Eggs and Sugar

    In a separate bowl, beat the eggs and granulated sugar together using an electric mixer until the mixture is pale and fluffy, about 5 minutes.

    Combine Mixtures

    Gently fold the melted chocolate mixture into the egg mixture. Add the vanilla extract and mix until just combined.

    Whip the Cream

    In another bowl, whip the heavy cream until it forms soft peaks. Carefully fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Chill the Mousse

    Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.

    Prepare Whipped Cream

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip using an electric mixer until soft peaks form.

    Serve

    Once the mousse is set, top each serving with a dollop of whipped cream before serving. Optionally, garnish with chocolate shavings or berries.
