    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare the Pancetta

    While the pasta is cooking, heat a large skillet over medium heat. Add the olive oil and then the pancetta. Cook until the pancetta is crispy and golden, about 5-7 minutes. Remove from heat.

    Mix the Egg and Cheese

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

    Combine Ingredients

    Once the spaghetti is drained, add it to the skillet with the cooked pancetta (do not turn the heat back on). Quickly pour the egg and cheese mixture over the hot spaghetti, tossing well to combine. The heat from the pasta will cook the eggs, creating a creamy sauce. If the mixture is too thick, add a bit of the reserved pasta water to loosen it.

    Taste and adjust seasoning with salt and additional black pepper if needed. Serve immediately, garnished with extra Parmesan cheese and freshly cracked black pepper.
