Mashing
1. Prepare the Mash
In a large mash tun, heat the filtered water to 68°C (155°F). Add the Pilsner malt and Carapils malt, stirring well to avoid clumping.
2. Mash Rest
Allow the mash to rest for 60 minutes, maintaining the temperature. Stir occasionally.
3. Sparging
After the mash rest, sparge the grains with additional hot water to collect the wort in your brew kettle.
Boiling
4. Boil the Wort
Bring the collected wort to a boil. Once boiling, add 1 oz of Saaz hops and boil for 60 minutes.
5. Aroma Hops Addition
With 5 minutes left in the boil, add the remaining 0.5 oz of Saaz hops for aroma.
Cooling and Fermentation
6. Cool the Wort
After the boil, cool the wort quickly to 20°C (68°F) using an immersion chiller or another cooling method.
7. Pitch Yeast
Transfer the cooled wort to a sanitized fermentation vessel and pitch the Lager yeast. Seal the vessel with an airlock.
8. Fermentation
Allow the beer to ferment at 10-12°C (50-54°F) for 2-3 weeks until fermentation is complete.
Conditioning
9. Condition the Beer
After fermentation, carbonate the beer by adding priming sugar if bottling. Allow to condition for another 1-2 weeks.
10. Chill and Serve
Chill the beer to your desired temperature and serve in a pilsner glass.
