Ingredients

Mashing
1. Prepare the Mash
In a large brew kettle, heat 3 gallons of water to about 165°F (74°C). Add the Pilsner, Munich, Caramunich, and Chocolate malts to the water and stir well.
2. Mash Rest
Maintain the temperature at around 155°F (68°C) and let the grains steep for 60 minutes, stirring occasionally.
3. Sparging
After the mash rest, sparge the grains with an additional 2 gallons of water heated to about 170°F (77°C) to extract sugars.
Boiling
4. Boil the Wort
Bring the collected wort to a boil. Once boiling, add the Saaz hops and boil for 60 minutes.
5. Add Flavor Hops
With 15 minutes remaining in the boil, add the Tettnang hops to the wort.
Fermentation
6. Cool the Wort
After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).
7. Pitch the Yeast
Transfer the cooled wort to a sanitized fermentation vessel and pitch the lager yeast.
8. Fermentation Process
Seal the fermentation vessel with an airlock and allow the lager to ferment at around 50°F (10°C) for 2 to 3 weeks.
Bottling
9. Prepare Bottling
After fermentation is complete, dissolve the corn sugar in 2 cups of boiling water to create a priming solution.
10. Bottle the Lager
Add the priming solution to the fermented lager and gently stir to mix. Bottle the lager in sanitized bottles and cap them.
11. Carbonation
Allow the bottles to carbonate at room temperature for about 2 weeks.
