Preparation

Mashing

1. Prepare the Mash

In a large pot, heat 3 gallons of filtered water to 165°F (74°C). Add the Pilsner malt and Carapils malt to the hot water, stirring well to ensure all grains are submerged.

2. Mash Rest

Maintain the mash temperature at 150°F (65°C) for 60 minutes. Stir occasionally to prevent clumping.

3. Sparging

After the mash rest, heat an additional 2 gallons of water to 170°F (77°C). Slowly pour this water over the grains to extract the sugars, collecting the liquid (wort) in a separate pot.

Boiling

4. Boil the Wort

Bring the collected wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes.

5. Add Flavor Hops

In the last 15 minutes of the boil, add the Saaz hops for additional flavor.

6. Cool the Wort

After boiling, cool the wort quickly using an immersion chiller or by placing the pot in an ice bath until it reaches about 70°F (21°C).

Fermentation

7. Transfer to Fermenter

Transfer the cooled wort to a sanitized fermenter, leaving behind any sediment from the boil.

8. Pitch the Yeast

Sprinkle the Pilsner yeast over the surface of the wort in the fermenter. Seal the fermenter with an airlock.

9. Fermentation Period

Allow the beer to ferment at around 55-60°F (13-16°C) for 2 weeks.

Bottling

10. Prepare Bottles

Sanitize your bottles and caps. Mix the corn sugar with a cup of boiling water to create a priming solution.

11. Bottle the Beer

Add the priming solution to the bottom of the bottles, then siphon the beer into each bottle, leaving about an inch of space at the top.

12. Cap the Bottles

Cap the bottles and store them upright at room temperature for about 2 weeks to carbonate.

Enjoying

13. Chill and Serve

Once carbonated, chill the bottles in the refrigerator. Pour into a glass and enjoy your crisp and clean Lev Pilsner Style Lager!
