Panna Cotta Preparation

Prep Gelatin
In a small bowl, sprinkle the gelatin powder over the 3 tablespoons of water and let it sit for about 5-10 minutes until it blooms.

Heat Cream and Milk
In a medium saucepan over medium heat, combine the heavy cream, whole milk, and 3 tablespoons of sugar. Stir gently until the sugar dissolves and the mixture is heated through, but do not let it boil.

Add Gelatin
Remove the saucepan from heat. Add the bloomed gelatin and 1 teaspoon of vanilla extract to the warm cream mixture. Stir until the gelatin is completely dissolved.

Pour into Molds
Pour the mixture into individual serving cups or molds. Allow to cool at room temperature for 30 minutes, then cover and refrigerate for at least 4 hours, or until set.
Berry Sauce Preparation

Cook the Berries
In a small saucepan, combine the mixed berries, 2 tablespoons of granulated sugar, and 1 tablespoon of lemon juice. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the berries break down and the sauce thickens slightly.

Cool the Sauce
Remove from heat and let the berry sauce cool to room temperature. Once cooled, you can strain it if you prefer a smoother texture, but this is optional.

Serve
Once the panna cotta is set, remove it from the refrigerator. Top with the berry sauce before serving.
