Method
Preparing the Meat Sauce

Cook the Meat
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.

Brown the Beef
Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned.

Add Tomatoes
Stir in the crushed tomatoes, tomato paste, dried oregano, salt, and black pepper. Simmer for about 20 minutes, stirring occasionally.
Preparing the Béchamel Sauce

Make Roux
Add the flour to the melted butter and whisk together for about 2 minutes until the mixture is golden.

Add Milk
Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring, until the sauce thickens, about 5-7 minutes.

Season
Add the nutmeg and salt, stirring well before removing from heat.
Assembling the Lasagna

Preheat Oven
Preheat your oven to 180°C (350°F).

Layer Ingredients
In a baking dish, spread a thin layer of meat sauce, followed by a layer of noodles, then a layer of béchamel, and a layer of cheese. Repeat the layers until all ingredients are used, finishing with béchamel and cheese on top.

Bake
Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the top is golden and bubbly.

Cool and Serve
Allow the lasagna to cool for about 10 minutes before slicing and serving.
