Cheese Mixture

Cooking Ingredients

Method

Preparation

  1. 1

    Prepare the Cheese Mixture

In a mixing bowl, combine the frico cheese (or aged Montasio cheese), grated Parmesan cheese, and freshly ground black pepper. Mix well until evenly combined.

  2. 2

    Prepare the Potatoes

Peel and thinly slice the potatoes. Rinse them under cold water to remove excess starch, then pat dry with a kitchen towel.

Cooking

  1. 3

    Cook the Potatoes

In a large skillet, heat the olive oil over medium heat. Once hot, add the thinly sliced potatoes, spreading them out evenly. Season with salt to taste and cook for about 10 minutes, stirring occasionally, until the potatoes are tender and starting to turn golden.

  2. 4

    Add the Cheese Mixture

Once the potatoes are cooked, sprinkle the cheese mixture evenly over the potatoes. Press down slightly to ensure the cheese adheres to the potatoes.

  3. 5

    Form the Frico

Continue cooking for another 5-7 minutes, or until the cheese is melted and begins to crisp up at the edges. Use a spatula to gently lift the edges and check for a golden brown color.

  4. 6

    Flip the Frico

To flip the frico, place a large plate over the skillet and carefully invert it so that the frico lands on the plate. Slide it back into the skillet to cook the other side for another 5 minutes, until golden brown.

  5. 7

    Serve

Once both sides are golden and crispy, remove from the skillet and let it cool for a minute before cutting into wedges. Serve warm.
