In a large pot, combine 2 cups of water, 1 cup of brown sugar, 1 cup of maple syrup, 1 tsp of black pepper, 1 tsp of garlic powder, and 1 tsp of onion powder. Stir well until the sugar dissolves completely.

Place the Canadian bacon in the pot with the brine. Ensure that the bacon is fully submerged. If necessary, place a plate on top to keep it submerged.
