Method

Brewing Kombucha

    Prepare Tea

    In a large pot, bring 8 cups of water to a boil. Once boiling, remove from heat and add 4 cups of organic black tea. Let it steep for 10-15 minutes.

    Add Sugar

    Remove the tea bags and stir in 1 cup of sugar until completely dissolved. Allow the sweetened tea to cool to room temperature.

    Fermentation Setup

    Once cooled, pour the sweetened tea into a glass jar or fermentation vessel. Add 1 cup of starter tea and gently place the SCOBY on top.

    Cover and Ferment

    Cover the jar with a clean cloth and secure it with a rubber band. Let it ferment in a warm, dark place for 7-14 days, depending on your taste preference.

Flavoring Kombucha

    Prepare Flavorings

    After fermentation, remove the SCOBY and reserve it along with 1 cup of kombucha for your next batch. Add 2 cups of organic fruit and 1 cup of organic fruit juice into the kombucha.

    Optional Herbs

    If desired, add 1 cup of organic herbs to the mixture. Blend or muddle the fruit and herbs to release their flavors.

    Bottle Kombucha

    Using a funnel, pour the flavored kombucha into bottles, leaving some space at the top. If you want carbonation, add 1 tsp of bottling sugar to each bottle.

    Second Fermentation

    Seal the bottles and let them ferment at room temperature for another 3-7 days. Check daily to avoid over-carbonation.

Serving

    Chill and Serve

    Once the second fermentation is complete, refrigerate the bottles before serving. Pour into glasses, enjoy your homemade Boochcraft kombucha!
