Brewing Kombucha

Prepare Tea
In a large pot, bring 8 cups of water to a boil. Once boiling, remove from heat and add 4 cups of organic black tea. Let it steep for 10-15 minutes.

Add Sugar
Remove the tea bags and stir in 1 cup of sugar until completely dissolved. Allow the sweetened tea to cool to room temperature.

Cover and Ferment
Cover the jar with a clean cloth and secure it with a rubber band. Let it ferment in a warm, dark place for 7-14 days, depending on your taste preference.
Flavoring Kombucha

Prepare Flavorings
After fermentation, remove the SCOBY and reserve it along with 1 cup of kombucha for your next batch. Add 2 cups of organic fruit and 1 cup of organic fruit juice into the kombucha.

Optional Herbs
If desired, add 1 cup of organic herbs to the mixture. Blend or muddle the fruit and herbs to release their flavors.

Second Fermentation
Seal the bottles and let them ferment at room temperature for another 3-7 days. Check daily to avoid over-carbonation.
