Method

Directions

  1. 1

    Prepare the Ingredients

Dice the bell pepper, red onion, jalapeño, and halve the cherry tomatoes. Set aside.

  2. 2

    Whisk the Eggs

In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy.

  3. 3

    Cook the Vegetables

In a non-stick skillet, heat the olive oil over medium heat. Add the bell pepper, red onion, and jalapeño. Sauté for about 3-4 minutes until softened.

  4. 4

    Add Beans and Tomatoes

Stir in the black beans and cherry tomatoes, cooking for another 2 minutes until heated through.

  5. 5

    Add Eggs

Pour the egg mixture over the vegetables in the skillet. Cook on medium-low heat, gently stirring the edges towards the center until the eggs start to set.

  6. 6

    Add Cheese and Finish Cooking

Once the eggs are mostly set, sprinkle the shredded cheddar cheese on top. Cover the skillet with a lid and cook for another 2-3 minutes until the cheese is melted and the eggs are fully cooked.

  7. 7

    Garnish and Serve

Sprinkle chopped cilantro over the top. Slide the omelette onto a plate, fold it in half if desired, and serve hot.
