Prepare the Mahi Mahi
Season the Mahi Mahi fillets with salt and black pepper. Heat olive oil in a skillet over medium heat and cook the fillets for about 4-5 minutes on each side or until they are cooked through and flaky. Remove from heat.

On a slice of rye bread, spread 1 tablespoon of Thousand Island dressing. Place a cooked Mahi Mahi fillet on top, followed by a quarter cup of sauerkraut and a slice of Swiss cheese. Top with another slice of rye bread.
