Cooking Instructions

  1. 1

    Prepare the Onions

Slice the yellow onions thinly. In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 30-40 minutes.

  2. 2

    Add Broth and Wine

Once the onions are caramelized, add the dry white wine and scrape the bottom of the pot to deglaze. Stir in the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a simmer and let cook for 20-30 minutes.

  3. 3

    Prepare the Baguette

While the soup is simmering, slice the baguette into 1-inch thick slices. Toast the slices in the oven until they are golden brown.

  4. 4

    Serve the Soup

Remove the bay leaf from the soup. Ladle the soup into bowls, place a slice of toasted baguette on top of each bowl, and sprinkle with shredded Gruyère cheese. You can broil the bowls in the oven for a few minutes to melt the cheese if desired.
