Prepare the Roast
Heat olive oil in a large skillet over medium-high heat. Season the beef chuck roast with salt, pepper, and oregano. Sear the roast on all sides until browned, about 4-5 minutes per side.

Slow Cook the Roast
Transfer the seared roast to a slow cooker. Add sliced onion, minced garlic, and beef broth. Cover and cook on low for 8 hours or until the meat is tender and shreds easily.

Shred the Beef
Once cooked, remove the roast from the slow cooker and shred the beef using two forks. Return the shredded beef to the broth in the slow cooker.

Prepare the Rolls
Preheat the oven to 350°F (175°C). Slice the French rolls in half and place on a baking sheet. Top each roll with shredded beef and a slice of Swiss cheese.

Melt the Cheese
Bake in the preheated oven for about 10 minutes or until the cheese is melted and bubbly.

Serve the sandwiches with a small bowl of the beef broth for dipping.
