Prepare the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, and salt. Gradually add the beer (or sparkling water) and mix until smooth. Let the batter rest for about 30 minutes.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the right temperature.

Coat the Fish
Pat the fish fillets dry with paper towels. Dip each fillet into the batter, allowing excess batter to drip off.

Fry the Fish
Carefully place the battered fish fillets into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove and let drain on paper towels.
