    Prepare the Ingredients

    Chop the bell pepper, onion, and celery. Mince the garlic and slice the sausage.

    Cook the Chicken

    In a large pot or Dutch oven, heat olive oil over medium heat. Add the chicken thighs, season with salt and black pepper, and cook until browned. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped bell pepper, onion, celery, and minced garlic. Sauté for about 5 minutes until softened.

    Add Sausage and Tomatoes

    Stir in the sliced andouille sausage and the canned diced tomatoes. Cook for another 3-4 minutes.

    Combine Rice and Broth

    Add the rice, chicken broth, and Cajun seasoning to the pot. Stir well to combine.

    Return the Chicken

    Place the browned chicken back into the pot. Bring the mixture to a boil.

    Reduce heat to low, cover, and let simmer for about 25-30 minutes, or until the rice is tender and the liquid is absorbed.

    Remove from heat, and fluff the jambalaya with a fork. Garnish with chopped green onions and parsley before serving.
