Prepare the Marinade
In a bowl, whisk together the bourbon, brown sugar, soy sauce, minced garlic, and grated ginger until the sugar is dissolved.

Marinate the Salmon
Place the salmon fillets in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Preheat the Grill
Preheat your grill to medium-high heat (about 375°F or 190°C).

Cook the Salmon
Remove the salmon from the marinade and let excess marinade drip off. Brush the grill grates with olive oil to prevent sticking. Place the salmon on the grill skin-side down. Grill for 5-6 minutes, then flip and grill for an additional 4-5 minutes, or until the salmon is cooked through and flakes easily with a fork.

Glaze the Salmon
During the last minute of grilling, brush the salmon with the reserved marinade to create a glaze.

Remove the salmon from the grill and sprinkle with salt, black pepper, and chopped green onions. Serve immediately.
