Seafood and Pasta
Method
Cooking Instructions
- 1
Cook the Pasta
Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
- 2
Prepare the Seafood
In a mixing bowl, toss the shrimp and scallops with the blackened seasoning until evenly coated.
- 3
Sear the Seafood
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned shrimp and scallops to the skillet and cook for 2-3 minutes on each side, or until cooked through and blackened. Remove from the skillet and set aside.
- 4
Make the Alfredo Sauce
In the same skillet, lower the heat and add the minced garlic. Sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, salt, and black pepper until the cheese is melted and the sauce is creamy.
- 5
Combine Everything
Add the cooked fettuccine, seared seafood, and chopped parsley to the sauce. Toss gently to coat the pasta and seafood with the Alfredo sauce.
- 6
Serve
Serve the blackened seafood Alfredo hot, garnished with additional parsley if desired.
