    Sear the Beef

    In a large skillet or Dutch oven, heat olive oil over medium-high heat. Season the beef chuck roast with salt and pepper. Sear the beef on all sides until browned (about 4-5 minutes per side). Remove from the skillet and set aside.

    Sauté Vegetables

    In the same skillet, add chopped onion and green bell pepper. Sauté for about 5 minutes until softened. Add minced garlic and sauté for another minute until fragrant.

    Combine Ingredients

    Add the canned diced tomatoes (with their juice), beef broth, red wine (if using), bay leaves, cumin, and oregano to the skillet with the sautéed vegetables. Stir well to combine.

    Add the Beef

    Return the seared beef to the skillet. Ensure the beef is submerged in the liquid. Bring the mixture to a simmer.

    Slow Cook

    Cover the skillet and reduce the heat to low. Allow the beef to cook for about 2-3 hours, or until it is fork-tender. Check occasionally and add more broth if necessary.

Finishing Touches

    Shred the Beef

    Once the beef is tender, remove it from the skillet and shred it using two forks. Return the shredded beef to the skillet and stir to combine with the sauce.

    Garnish and Serve

    Remove bay leaves before serving. Garnish with chopped fresh cilantro. Serve the Ropa Vieja over rice or with tortillas.
