In a medium saucepan, combine the granulated sugar and water. Place over medium heat and stir until the sugar dissolves completely.

Cooking the caramel
Increase the heat and allow the mixture to boil without stirring. Watch it closely until it turns a deep amber color (about 5-7 minutes).

Pouring the caramel
Once the caramel reaches the desired color, carefully pour it into a round baking dish or individual ramekins, tilting to coat the bottom evenly. Set aside to cool.

Mixing the custard
In a large mixing bowl, whisk together the eggs, sweetened condensed milk, evaporated milk, and vanilla extract until smooth.

Pour the custard mixture over the cooled caramel in the baking dish.
Baking

Preparing for baking
Preheat your oven to 350°F (175°C). Prepare a water bath by placing a larger baking dish in the oven filled with hot water, ensuring it reaches halfway up the sides of the flan dish.

Baking the flan
Carefully place the flan dish into the water bath. Bake for 50-60 minutes or until the custard is set and a knife inserted in the center comes out clean.

Cooling the flan
Remove from the oven and let it cool at room temperature. Then refrigerate for at least 4 hours or overnight for best results.
Serving

Unmolding the flan
To serve, run a knife around the edges of the flan to loosen it. Place a serving plate on top and invert the dish to release the flan, allowing the caramel to drizzle over the top.
