Marinade Preparation

    In a blender, combine pineapple juice, chipotle peppers, garlic cloves, cumin, oregano, salt, black pepper, and lime juice. Blend until smooth.

    Cut the pork shoulder into bite-sized pieces and place it in a large bowl. Pour the marinade over the pork, ensuring all pieces are coated. Cover and refrigerate for at least 4 hours, preferably overnight.

    Preheat a grill or stovetop skillet over medium-high heat. Remove the pork from the marinade and let excess marinade drip off. Grill the pork for about 10-15 minutes, turning occasionally, until well cooked and slightly charred.

    While the pork is cooking, thinly slice the red onion and set aside.

    Warm the corn tortillas on the grill or in a skillet until pliable. Add a portion of the grilled pork to each tortilla, top with sliced red onion, fresh cilantro, and diced pineapple.
