Prepare the Chorizo
In a skillet over medium heat, cook the chorizo sausage until browned and fully cooked, about 5-7 minutes. Drain excess grease and set aside.

Mix the Cheeses
In a large mixing bowl, combine the Chihuahua cheese, Monterey Jack cheese, and cream cheese. Mix until evenly combined.

Melt the Cheese
In an oven-safe skillet or a cast-iron skillet, layer the chorizo at the bottom. Then top with the cheese mixture. Place the skillet in a preheated oven at 350°F (175°C) and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Warm the Tortillas
While the cheese is melting, warm the corn tortillas on a dry skillet over medium heat for about 30 seconds on each side until pliable.

Garnish and Serve
Once the queso fundido is ready, remove it from the oven. Garnish with freshly chopped cilantro, a dollop of sour cream, and sliced jalapeños as desired. Serve hot with warm tortillas on the side.
