Rice Preparation

    Rinse the Rice

    In a fine mesh strainer, rinse the long-grain white rice under cold water until the water runs clear. This removes excess starch and helps achieve a smooth texture.

    Soak the Rice

    In a large bowl, combine the rinsed rice and water. Let the mixture soak for at least 4 hours or preferably overnight to soften the rice.

Blending & Flavoring

    Blend the Ingredients

    After soaking, transfer the rice and water mixture to a blender. Add the cinnamon sticks, vanilla extract, and sugar. Blend on high until the rice is finely ground and the mixture is smooth.

    Strain the Mixture

    Pour the blended mixture through a fine mesh strainer or cheesecloth into a large pitcher. Squeeze or press to extract as much liquid as possible while leaving the rice solids behind.

    Add Milk and Salt

    Stir in the milk (or almond milk) and add a pinch of salt. Mix well to combine all flavors.

Serving

    Chill and Serve

    Refrigerate the horchata for at least 30 minutes to chill. Serve over ice in glasses, garnished with a sprinkle of ground cinnamon on top.
