Preparation

Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks for easier cooking.

Mix Spice Rub
In a small bowl, combine garlic powder, cumin, chili powder, oregano, salt, and black pepper. Rub this mixture evenly over the pork chunks.
Cooking

Sear the Pork
In a large skillet, heat lard or vegetable oil over medium-high heat. Add the pork chunks and sear on all sides until browned, about 3-4 minutes per side.

Combine Ingredients in Slow Cooker
Transfer the seared pork to a slow cooker. Add chopped onion, minced garlic, chicken broth, orange juice, and lime juice.

Cook the Pork
Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, until the pork is tender and easily shreds.
Serving

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks.

Serve with Tortillas
Serve the shredded carnitas in corn tortillas, garnished with chopped cilantro, diced onion, and lime wedges.
