Prepare the Leeks

Trim the leeks, removing the green tops and the root ends. Slice them in half lengthwise and rinse thoroughly under cold water to remove any dirt. Cut into 1-inch pieces.

Prepare the Apples

Core and slice the apples into wedges. Toss them lightly with olive oil, salt, and pepper.

Braise the Leeks

In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped leeks, season with salt and pepper, and sauté for 5-7 minutes until they are tender. Add a splash of water, cover, and lower the heat to braise for another 10 minutes, stirring occasionally.

Grilling the Apples and Salmon

Grill the Apples

Preheat a grill pan over medium heat. Place the apple wedges on the grill and cook for about 3-4 minutes on each side until grill marks appear and they are slightly softened. Remove and set aside.

Grill the Salmon

Season the salmon fillets with olive oil, salt, and pepper. Grill the salmon fillets for about 4-5 minutes on each side or until they are cooked to your liking. Remove from the grill and let rest.

Making Sauce Maltaise

Prepare the Sauce

In a heatproof bowl, whisk together the egg yolks, orange juice, and salt. Place the bowl over a pot of simmering water, ensuring the bowl doesn't touch the water. Whisk constantly until the mixture thickens and becomes pale, about 5-7 minutes.

Incorporate Butter

Gradually whisk in the melted butter until smooth and creamy. Finally, stir in the orange zest. Remove from heat and set aside.

Assemble the Dish

On each plate, place a portion of the braised leeks. Top with the grilled apple wedges and a salmon fillet. Drizzle with the Sauce Maltaise and garnish with salmon roe on top.
