If using dried pinto or black beans, rinse them under cold water to remove any dirt. Soak the beans in a large bowl of water overnight or for at least 6-8 hours.

In a large pot, add the soaked beans along with 4 cups of vegetable broth or water. Bring to a boil over medium-high heat, then reduce to a simmer. If using canned beans, drain and rinse them before adding to the pot with the other ingredients.

Once the beans are tender (this may take 1-2 hours for dried beans), add the chopped onion, garlic, bell pepper, diced tomatoes, cumin powder, chili powder, salt, and black pepper. Stir well to combine.

Allow the mixture to simmer for an additional 30-40 minutes, stirring occasionally, until the vegetables are softened and the flavors meld together.

Remove from heat and stir in the lime juice and chopped cilantro. Adjust seasoning with additional salt, if needed.
