Potatoes

Butter and Cream

Method

Preparation of Potatoes

  1. 1

    Peel and Chop Potatoes

Peel the russet potatoes and chop them into even-sized chunks, about 1-2 inches thick.

  2. 2

    Boil Potatoes

Place the chopped potatoes in a large pot and cover with cold water. Add 1 tablespoon of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes or until the potatoes are fork-tender.

Mixing Ingredients

  1. 3

    Drain and Mash

Once the potatoes are cooked, drain them in a colander and return them to the pot. Mash the potatoes using a potato masher until they are smooth and creamy.

  2. 4

    Add Butter and Cream

Add 1 cup of unsalted butter and 1 cup of heavy cream to the mashed potatoes. Stir until well combined and the butter is melted.

  3. 5

    Incorporate Green Chiles

Add 2 cups of canned green chiles and mix until evenly distributed throughout the mashed potatoes.

  4. 6

    Season the Mixture

Sprinkle in 1 teaspoon of black pepper and 1 teaspoon of garlic powder. Stir well to combine all the flavors.

Serving

  1. 7

    Transfer to Serving Dish

Spoon the green chile mashed potatoes into a large serving dish.

  2. 8

    Garnish

Finely chop the fresh cilantro and sprinkle it over the top of the mashed potatoes for garnish.

  3. 9

    Serve

Serve the green chile mashed potatoes warm as a delicious side dish for your meal.
