Prepare the Taco Shells

Heat the Oil
In a large skillet, heat the olive oil over medium heat.

Cook the Tortillas
Add the corn tortillas one at a time, cooking for about 30 seconds on each side until warmed and slightly crispy. Remove and set aside on a plate.
Prepare the Meat Filling

Brown the Beef
In the same skillet, add the ground beef and cook over medium-high heat until browned, about 5-7 minutes.

Add Seasoning and Water
Stir in the taco seasoning and water. Bring to a simmer and cook for an additional 5 minutes, or until the mixture thickens slightly.
Assemble the Tacos

Fill the Shells
Take a taco shell and fill it with a generous amount of the meat filling.

Add Toppings
Top with shredded lettuce, diced tomatoes, grated cheddar cheese, sour cream, and sliced jalapeños as desired.

Serve
Serve immediately while warm, with any extra toppings on the side.
