Dough Preparation

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, baking powder, and salt. Mix well.

Add Water
Gradually add warm water to the dry ingredients, mixing until a soft dough forms.

Knead Dough
Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Season Filling
Stir in chili powder, cumin, salt, and black pepper. Cook for an additional 2 minutes. Remove from heat and let cool slightly.

Add Cheese (Optional)
If using, mix in the shredded cheese until melted and well combined.
Sopapilla Assembly and Cooking

Roll Out Dough
After resting, divide the dough into 24 equal pieces. Roll each piece into a ball and then flatten into a circle about 6 inches in diameter.

Fill Sopapillas
Place a tablespoon of the meat mixture in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

Heat Oil
In a deep skillet, heat vegetable oil over medium-high heat until hot (around 350°F or 175°C).

Fry Sopapillas
Carefully place a few sopapillas in the hot oil at a time. Fry each side until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Serve warm with salsa and sour cream on the side, if desired.
