    Prepare the Seafood

    Cut the mahi-mahi fillets into small cubes and place them in a glass or ceramic bowl. Add the shrimp and ensure both seafood types are well mixed.

    Marinate the Seafood

    Squeeze the juice of the limes over the seafood mixture until fully submerged. Cover the bowl with plastic wrap and refrigerate for 30 minutes to allow the seafood to 'cook' in the lime juice.

Mixing Ingredients

    Prepare the Vegetables

    While the seafood is marinating, dice the tomatoes, finely chop the red onion, and jalapenos, and chop the cilantro. Combine all the vegetables in a separate bowl.

    Combine Seafood and Vegetables

    After 30 minutes, remove the seafood from the fridge. Drain a little excess lime juice if desired, then add the vegetable mixture to the seafood. Stir gently to combine.

Seasoning and Serving

    Season the Ceviche

    Sprinkle salt and black pepper over the ceviche and mix gently. Taste and adjust seasoning as needed.

    Serve the ceviche chilled, garnished with extra cilantro and lime wedges if desired.
