Prepare Ingredients
Dice the tomatoes and onions into small pieces.

Assemble Quesadillas
On a clean surface, place a tortilla down and sprinkle half of the shredded cheese on one half of the tortilla. Top with diced tomatoes and onions, then sprinkle the remaining cheese on top. Fold the tortilla over to create a half-moon shape.

Shrimp Diablo Pasta Preparation

Cook Pasta
In a large pot, bring salted water to a boil and add the pasta. Cook according to package instructions until al dente. Drain and set aside, reserving some pasta water.

Sauté Shrimp
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

Add Shrimp
Add the shrimp to the skillet along with crushed red pepper flakes. Cook until the shrimp turn pink and are cooked through, about 3-4 minutes.

Combine Ingredients
Add the cooked pasta to the skillet with shrimp. Pour lime juice over the mixture and add black beans. Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.

Garnish and Serve
Remove from heat and stir in chopped fresh cilantro. Plate the Shrimp Diablo Pasta and serve alongside the prepared quesadillas.
