Prepare the Chorizo

Cook the Chorizo
In a skillet over medium heat, add the chorizo and cook for about 5-7 minutes, breaking it up with a spatula until it's fully cooked and browned. Drain excess fat if necessary and set aside.
Prepare the Cheese Mixture

Combine the Cheeses
In a mixing bowl, combine the Chihuahua cheese, Monterey Jack cheese, and cream cheese. Mix until well combined.

Add the Chorizo
Fold the cooked chorizo into the cheese mixture until evenly distributed.
Bake the Queso Fundido

Transfer to Baking Dish
Preheat your oven to 350°F (175°C). Transfer the cheese and chorizo mixture into an oven-safe dish.

Bake
Place the dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is completely melted and bubbly.
Prepare the Tortillas

Warm the Tortillas
While the cheese is baking, warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

Once the queso fundido is out of the oven, garnish with fresh cilantro, sour cream, and sliced jalapeños to taste. Serve immediately with warm flour tortillas.
