Flatbread Base

New Mexican Red Chile Sauce

Method

Flatbread Base Preparation

  1. 1

    Prepare the Dough

In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Gradually add warm water and olive oil. Mix until a dough forms.

  2. 2

    Knead the Dough

Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

  3. 3

    Rest the Dough

Cover the dough with a damp cloth and let it rest for 30 minutes.

New Mexican Red Chile Sauce Preparation

  1. 4

    Prepare the Chile Pods

Remove the stems and seeds from the dried red chile pods. Soak them in hot water for about 15 minutes until softened.

  2. 5

    Blend the Sauce

In a blender, combine the soaked chiles, garlic, onion, cumin, and water. Blend until smooth. Season with salt to taste.

Assembling the Pizza

  1. 6

    Preheat the Oven

Preheat your oven to 475°F (245°C).

  2. 7

    Roll out the Dough

Divide the dough into two equal parts. Roll each part into a thin flatbread on a floured surface.

  3. 8

    Add the Sauce

Spread a generous amount of the New Mexican red chile sauce over each flatbread.

  4. 9

    Add Toppings

Evenly distribute the cheese, corn, black beans, green chiles, tomatoes, and choice of meat over the sauce.

  5. 10

    Bake the Pizza

Place the flatbreads on a baking sheet and bake in the preheated oven for 12-15 minutes or until the cheese is bubbly and the edges are golden brown.
